Ferrari Trento’s quality is the result of lots of small, daily procedures.
It is created in mountainside vineyards, in the finest areas of Trentino, and perfected in the winery using the mandatory techniques for making Trentodoc wines.

TRENTINO, the largest vineyard zone planted with chardonnay

With its mountain viticulture, Trentino is an area that is extraordinarily suited to the production of sparkling wines of great elegance and complexity: the alternation of warm days and cool nights gives added quality to the grapes, giving them a rainbow of different flavours and fragrances.

It is thanks to the intuition of Giulio Ferrari that this area represents today the largest vineyard zone planted with Chardonnay in Italy; a lovely garden of vines, guarded like a treasure by the mountains that surround it.

The first d.o.c in italy, devoted to metodo classico

“Trentodoc” expresses the quintessence of sparkling wines from the mountains, produced exclusively by the Metodo Classico from grapes grown in Trentino. It is the first D.O.C. created in Italy for Metodo Classico and the second in the world, after Champagne. There are 40 producers and more than 100 different wines bearing the brand TRENTODOC, devised in 2007 and promoted by Itituto Trentodoc.

Towards the end of the summer, when the bunches of Chardonnay and Pinot Noir are ripe, the grapes are picked by hand and taken to the winery, where they are pressed. This is followed by the first fermentation, from which derive aromas reminiscent of those of the variety of origin.

 

 

After the creation of the cuvée (the desired blend), the base wine is bottled and enriched with sugars and selected yeasts. So the second fermentation begins: the one that creates the perlage (bubbles).

The cuvée remains in the bottle virtually undisturbed for between two and ten years, depending on the individual wine. In the silence of the cellar the daily ritual of remuage carried out: that eighth of a turn of each bottle that is indispensable for making the sediment slide towards the cork; this sediment will then be removed by means of dégorgement. The process end with the addition of the liqueur d’expédition, the secret formula of which defines the house style of each individual winery.

The soul of Ferrari’s wines stems from the generosity of nature and the tenacity of man; it originates from grapes hand-picked in the Lunelli family’s vineyards and from the labours of the 500 families of vine growers in Trentino who supply their grapes.

In these mountain vineyards, maintained and tended like gardens, every row of vines is an expression of man’s deep respect for nature and his contact with the earth. Ferrari’s agronomists supervise the grape suppliers throughout the year, while the Company’s oenologists control every phase of the delicate vinification process.

Excellence is thus expressed in every stage of the supply chain, from the vineyard to the table.
